Tea in our open spaces is a cult drink that everyone loves without exception. In addition to excellent taste and smell, it has a number of healthy properties, due to its high content of antioxidants.

Unlike coffee, which must also be properly prepared, drinking tea does not seem to be too complicated. However, there are secrets here.

1. Pay attention to the freshness of tea

Over time, the essential oils contained in tea can decay, which negatively affects its taste. Tea can be stored for up to two years if it is stored in a cool, dry place (try an airtight container). You will not get sick and not poisoned if you drink expired tea, but tastes will be much better if you use it for six months.

2. Freedom tea leaves!

Tea leaves significantly increase in volume when brewing. Therefore, in order to fully unleash its full potential, take care of free space. This means that you should give preference to leaf tea, and if you still like tea in tea bags, then pay attention to the pyramids, in which there is more space for tea.

3. Tea is delicious water.

In our cup of tea, the main part is water, so it is no exaggeration to say that the taste of tea depends on the water used, even more than on the type of tea leaves. The fact that it is not recommended to use chlorinated tap water is understandable to everyone, but the specific recommendations for choosing water depend on your preferences and place of residence. In any case, take this issue seriously.

4. Boiling point

No less important than the quality of water is its temperature. We know from childhood that water must be boiled well. However, for brewing good tea   boiling boiling water is not required at all. So, black tea is best brewed at a temperature of about 90 degrees, and green and white varieties at 70-80 degrees. Therefore, after boiling water, it is better to let it cool down to the required temperature. And in no case do not boil the water again and do not mix boiled and not boiled water - good tea will not work!

5. Not too much, not too little.

Stay on the norm from 1½ to 2 tablespoons of tea for a glass of water for large leaf tea leaves and greens, as well as herbal varieties. For most black teas, which are more compact and have a longer drying time, 1 tsp is enough. If you want to get a stronger and fragrant drink, then add tea, but do not increase the time of infusion.

6. Proper dishes

The use of the correct utensils is of great importance for making delicious tea. It is best to brew and use this drink in a ceramic dish, because it was not for nothing that the triumphal procession of tea around the planet was accompanied by fashion for porcelain and earthenware. Now on sale are a variety of glass teapots for brewing, which are also quite applicable. The main thing to remember is that making tea in metal dishes is extremely undesirable.

7. Look at the clock

If the drink has stood, then it will have a bitter taste too, because the tea begins to produce tannins. It is still not harmful to health (over-brewed tea is sometimes used as a home remedy for indigestion), but it can hardly be called tasty. Black tea will take about three to five minutes to infuse, while green and white need only two to three minutes to achieve condition.

8. Not a drop of milk!

In our country, unlike some other countries, tea with milk is not very common. And that's just great! Milk proteins can bind with the beneficial substances of tea and weaken, thus its healing effect.

I confess, before I start drinking good tea, I have sinned drinking a low-quality drink in tea bags. I never liked coffee, so in the distant student years tea was my main source of vigor and energy. I threw a couple of bags into the teapot, leaving them to brew for a while. But with each subsequent cup, its contents grew darker and darker. Nothing saved us from the bitter nasty taste - neither sugar nor a spoonful of jam.

Now I prefer to regale. good tea, and I will say that it’s right to brew it, of course, is not really art, but certain skills will be required. Doing it not according to the rules is like undercooking an excellent piece of pork or the same as turning it into a charcoal.

There are many ways to brew tea. Some of them are widely known, others are very specific. I will try to talk about my observations, about the receptions in the procedure of tea drinking.

Basic rules for brewing tea that I observe

Water quality

The taste of tea is greatly influenced by the quality of the water. But few people think about it. Before, I used tap water, boiled it and brewed it. Now it seems wild to me! If you want to drink a really good drink, then you should pay special attention to the characteristics of the water.

Most tasty tea   I drank on water from a natural source. This water is enriched with oxygen, so the drink turns out extremely fragrant. It is not always possible to find a source nearby, so the optimal way is to use bottled water bought in a store.

Distilled water, that is, purified water from all impurities, is not recommended. The taste of tea on it becomes dull, not multifaceted, lost all its "zest".

As for filters, they should be cleaned and replaced regularly. Filter jars also need to be frequently cleaned and in no case be stored in the refrigerator. After all, in fact, the refrigerator is a place where smells of various products are collected, and the jug absorbs them. And this, in turn, adversely affects the quality of water and the tea prepared on it.

Water temperature

Water temperature - another nuance that affects the taste properties of tea. I also did not think about this before, until one of my friends began to get involved in the history of tea and tea ceremonies. She told me that too hot water made the tea bitter, and the cool one would not reveal one hundredth of the entire palette of the drink. For each type of tea there is an optimal brewing temperature. Of course, these are generalized recommendations, and when preparing, it is better to read the information on the packaging or by experiment to find options.

For black teas, the brewing temperature is 98 ° C, for green tea - 80-82 ° C, for white tea - 70-80 ° C, and oolong tea is brewed at 90 ° C.

I use a tea thermometer to measure the water temperature. Compact and convenient device that can be purchased in specialized stores.

Dishes

The material from which the dishes are made, affects the taste characteristics of tea. I prefer to use porcelain or clay teapots. The advantages of such dishes are the preservation of taste, aroma, color, and porcelain teapots are aesthetic value and decorate any interior.

I used to use teapots of glass. But they have a high thermal conductivity, because of which tea quickly loses its flavor. These teapots are indispensable when brewing blooming teas. This is just an amazing sight when you see how a flower appears from an ordinary ball of fabulous beauty or a whole bunch.

To make tea, I take special bowls with a lid. Such dishes allow you to fully enjoy the delicious aroma of the drink.

Drink a drink better from china. First, nice. Secondly, porcelain softens the temperature and enhances our positive emotions. It is always nice to eat from beautiful dishes. To feel all the magic of tea ceremonies, you just need to purchase at least one porcelain set.

The quantity and quality of welding

All information on how much tea leaves are required can be found on the packaging, then follow these instructions. Basically, as I noticed, the standard is 1 teaspoon per 250 ml of boiling water. However, there are manufacturers who recommend different proportions.

The quality of tea is very difficult to determine. I pay attention to the information on the packaging, namely: the country of production, the manufacturer himself, the place of packing, storage conditions, methods of preparation, shelf life and weight. This data gives at least the primary information about the product, and if something bothers me, I choose the next package. And so, of course, I found all my tea favorites empirically, by trial and error.

How really tasty to brew tea - my trademark secrets

In my collection there are more than a dozen different teas. Some buy in special shops of my city, others cite from travel, others give me my friends. I love all my teas and take turns.

For each type of tea I have developed my own method of brewing. And I will talk about how best to brew one or another of them without using a special thermometer, that is, to the eye.

Black Tea Brewing Rules

The most common tea for us is black. To brew it, I take bottled water. I boil it in an enameled kettle. I wait when the water starts to boil, but I do not bring it to boiling. I take out a porcelain teapot, rinse with hot water and pour the necessary amount of leaves into it at the rate of 1 tsp. 250 ml of water. Brew about 5 minutes, while the kettle tightly close the lid. I also cover it with a napkin that lets in steam, but detains aromatic essential oils.

I want to note that many brewed tea is called simply brewing and then diluted with water. I do not do that, because I believe that tea should be rich, thick and tart. It is pleasant to enjoy such a drink, appreciating slowly and unhurriedly its delicious taste.

Properly brew green tea

For this tea I use spring water. Its hard to find, but worth it. Brewing boiling water (I’ll need two porcelain teapots) and proceed directly to the brewing.

For green tea will require 1 tsp. leaves per 200 ml of water. I do not bring water to active boiling, that is, its average temperature varies within 85 degrees.

Green tea insist 2 minutes, then pour into another kettle. This is necessary to evenly distribute the strength of the drink in all cups. Brewed tea is better to pour immediately, otherwise its remnants will get an unpleasant taste with bitterness.

The uniqueness of green tea is that it can withstand up to five brews, and with each of them the taste will be opened from a new side.

How to brew red tea?

Of all the varieties of red teas, my favorite is karkade. It is simple to brew it: I take 8-10 tsp. For one liter of water. tea and boil for 5 minutes. Although I am not a fan of sugar, I still need to add it in Karkad. This drink can be drunk hot and cold. It perfectly quenches thirst, refreshes on a hot day and warms in winter.

How to brew white tea?

Until recently, I did not even know that there was such a type of tea. And for me it has become a real “taste” discovery. Water temperature for brewing should not exceed 85 ° С. The special concentration of oils gives the tea an exquisite aroma. Cool boiling water will simply nullify all its aromatic component. Brewing time - 5 minutes. Having tried white tea for the first time, I fell in love with its incomparable taste, and now it is always in my reserves.

Features of the procedure and the ritual of tea drinking in my family

I love tea ceremonies in oriental style or in English. But the most favorite is the Russian tea party, the main attribute of which is the samovar. I have a real, old, large samovar from the beginning of the 20th century in my house, which I acquired in a village. It is about the Russian traditional tea party, I want to tell.

Tea ceremony in Russia came from the East. Our ancestors brewed not only tea, but also various herbs, leaves - mint, cherry and currant. But the main thing that came from the eastern countries is a kind of ritual that has adapted to the mentality of the Russian people.

What makes the eastern tea ceremony different from ours? In the east, tea-drinking is a certain opportunity to go deep into yourself, to communicate with your inner world, to break for a while the connection with vanity. In Russia, the tea-drinking ceremony spiritually unites people gathered around the common table, which contributes to heart-to-heart conversation. We love to drink tea and eat.

It is a samovar - the main attribute of the Russian tea ceremony. He was in every home and was a symbol of comfort and peace. The samovar is always in the center of the table. It radiates light, good emotions and kindness, puffing smoke and gurgling water. And at these moments, everything becomes unreal fabulous and simple.

Properly brew tea - a difficult thing, it requires care and degree. But how nice it is to gather all relatives and friends at the table and enjoy tea, this fragrant and tasty drink!

Tea brewed according to all the rules of tea ceremonies turns out very tasty. If you have the opportunity to sometimes visit places where you can taste the amazing real drink, take advantage of it. However, many of us lack such an opportunity, and there is neither time nor conditions to repeat this procedure at home.

Let's try to somewhat simplify the process of making tea, but so as not to cause any special loss in quality. So, how to brew black tea? The flavor qualities of the resulting beverage will depend on the water temperature, its quality, the dishes used, the amount of brewing and the brewing itself.

For brewing tea need soft water, in which the content of salts and various impurities is minimal. Ideally, this should be water from a flowing glacier lake or a high mountain source. You can buy water in the supermarket, but do not take soda or mineralized water. What if you have only tap water at your disposal? In this case, the usual filter helps. Also suitable water, settled in a bottle for a day. And yet - do not take the water already boiled once. Better get some fresh.

The label of good tea indicates information on how to brew delicious tea: the temperature of the water, how long it will take for brewing, how many tea leaves are provided for this variety. And if such information is not available, then you can follow the well-known rule: the more fermented tea leaves, the hotter the brewing water should be used. For example, for red and black - 95-100 degrees, for green, white and yellow tea - 60-85 degrees.

It is believed that the best dishes for brewing tea - ceramic teapots up to one and a half liters of red clay. Also for brewing, you can take a traditional cup of gaiwan. It is similar to a bowl, only with a saucer and a lid.

First, we fill the teapot with boiling water, pour it, put dry tea leaves, again fill it with water of the required temperature, which we immediately pour out. Leaves should be washed beforehand. Some use french presses. This is permissible, just keep in mind that it is not recommended to press the leaves with a press. Chaiki should be able to finish. This rule is important to consider if you are interested in how to brew delicious tea.

It is believed that to get a tasty drink for 100-150 ml of water you need to take a teaspoon of dried tea leaves. However, this is very approximate. If the tea leaves are small, then it is desirable to increase the amount of water to 250 ml.

By the way, such an infusion for many people is too strong. Therefore, trust your taste and gradually you will find your standard and learn how to brew black tea.

What should be the kettle before brewing tea?

Before brewing the kettle you need to warm and then wipe dry. After this, dry welding is poured, which is filled with water of the required temperature. The tea should be distributed evenly across the bottom of the kettle, leaving no slides.

How much time is allowed for brewing and how many times it can be repeated depends on the variety. With each subsequent brewing increases the time. You can also gradually make hot water, but this should be within the recommended temperatures.

The following general rule - do not fill the kettle to the edge, a maximum of 2/3. It is also recommended to cover the kettle with a napkin so that the holes on the spout and the lid are covered. It is necessary in order that aroma was kept, and essential oils did not evaporate.

How to determine whether the tea was brewed correctly?

The appearance of brownish foam on the surface of the tea infusion indicates the correctness of brewing. Since this foam contains biologically active substances, it is very useful. Gently roll the teapot, without raising it above the surface of the table, let the foam mix with the rest of the infusion. When cooling the drink you can find a precipitate from it - the so-called "cream". The better the tea, the more “cream”.

Drinking tea must be fresh, not warmed and not re-boiled again. The most useful and tasty tea is in the first half hour. It adds milk, spices, salt, sugar, lemon, alcohol, and more. The most common addition of milk and sugar. If you like this drink, you should remember that tea is added to milk, not vice versa. In this case, the tea should be strong.    Latte Cook at home
